The new Logan Circle community gathering area includes With international inspirations and regional ingredients, this is a new American meal.  Viceroy Washington DC, a sophisticated lifestyle hotel in the center of Logan Circle, has opened Dovetail, a contemporary bar and restaurant led by Executive Chef James Gee. The indoor-outdoor restaurant, which is located on the 14th Street corridor in the District, is expected to add to the area’s burgeoning culinary scene.

Dovetail is defined by the seamless connectivity of distinct elements that skillfully fit together – referencing Chef Gee’s dynamic culinary expertise and the community gathering together to bond and share a fantastic meal – and is inspired by the excitement of the capital city’s hottest area. Chef Gee incorporates numerous ethnic cooking ideas and tastes from Cantonese, Italian, and Spanish origins into his recipes, with a concentration on fresh flavors through the lens of the Mid-Atlantic and Appalachian regions of the United States. Chef Gee’s seasonal dishes feature ingredients from East Coast farmers, fishermen, and suppliers with whom he has long-standing relationships.

The first spring menu will feature root vegetables, berries, and peas, as well as the finest of the season’s produce. Chef’s Italian and Cantonese ancestors inspired the Quinoa & Sweet Potato Salad, which is cooked with fresh local ingredients, a creamy sheep’s milk ricotta for a rich flavor, and a ginger, white soy sauce, and citrus dressing. Freshly seared yellowfin tuna covered in fennel is served over a red beet puree with black garlic molasses and goat cheese cream in the Fennel Crusted Yellowfin Tuna Crudo.

Dovetail provides a chef’s table for guests to use as a less formal, more communal location to congregate with friends and family. Dovetail will provide new culinary events for guests and locals later this year, including chef cooperation dinners with prominent chefs and themed beverage dinners featuring the restaurant’s local partners and winemakers.

Local spirits, specialty breweries, and imaginative cocktails are featured prominently in the beverage program. Dovetail’s unique yet approachable beverages feature DC-based alcohol businesses such as One Eight Distilling and Green Hat Gin. The delightful Truth In Our Thorns, made with tequila, aloe liqueur, blue curacao, pineapple, honeydew, cactus, lime, and cilantro agave, as well as the Taj Mahal, made with bourbon, watermelon, curry leaf, lime, and berbere tinc, are among the cocktails available.
